Hi Edward
I had a use case to monitor voltages (<10V) + Temperature, over a month, at
1 to 2 samples per minute.
I developed an Arduino based HW application with ADC + Temp sensor + save
file on an SD card.

I can see benefits for higher sample rate, and definitely, storage issue is
to be tackled.

Your proposal is SW (Software) only or HW + SW solution ? The GitHub repo
includes only SW, correct ?
I see you kinda read instruments from Serial port... Is that regular lab
equipment, or development you foresee ?

What do you request from us ?
I agree with Nicklas that plotting is better off the application.
The most important is to retrieve the data, and get a grip on them...
