Buy an OKI. I have an older dual output station as my workhorse but
I've been ogling the newer MX700. If I were buying today that would
be my only alternative.

As was said, set temperature is determined by the particular tip, for
my existing station there are three different temperatures available.
Not all tips come for all three temperatures.

The tip heats within five seconds and stays at the set temperature as
long as the power supply (station) unit has enough output power for
the thermal load.
