Try editing djgpp.env to remove the line which says this:

  +INFO_LINES=40

Please note that Info uses direct screen access functions which call
ScreenRows() and ScreenCols().  These two functions get the screen
size info from the BIOS data area, so if your non-standard video mode
is inconsistent with the BIOS data, you might see all kinds of weird
effects.

You could try "info --speech-friendly", which switches Info to
standard buffered I/O routines instead of direct screen access, but
you will lose colors as well...
