The 'official' reference would be Andrew Schulman's "Undocumented DOS".

Every other serious book on MSDOS lowlevel programming should do, too.
I would consult "PC intern", e.g.. Ralph Brown's Interrupt list should
also contain the necessary bits and pieces, although it may be a bit
harder to get a single connected picture from that.
