Have a look at the book Supercharged Bitmapped Graphics by Steve Rimmer 
if you can find it. It's from Windcrest/McGrawHill, (c) 1992, ISBN 
0-8306-3788-5. GIF files are covered for about 50 pages in chapter 2. The 
TOC doesn't admit to a viewer, but it does include discussion of GIF 
compression, GIF file structure, Macintosh GIF  files, Extension blocks, 
Extension block structures, an example GIF reader, writing GIF files, packed 
file structure and using GIF files. Lots of source included and my copy has the 
source on disk (5.5") inside the back cover.

Lots of other file formats covered.

Sorry I don't have a reference for AVI. Hope this helps and good luck with it.
