Please download the DJGPP FAQ list and look up in the indices everything 
that tells something about Win95 and possible causes of crashes, then see 
if anything helps you to avoid the crashes.  The test programs that come 
with DJGPP should indeed *not* crash.

You might consider invoking go32-v2 with no arguments and posting 
whatever it prints.  The stack trace printed when a program crashes would 
also help.

To learn about DPMI, I recommend the book Extending DOS, 2nd edition.
