Not done wave soldering, but from what I understand wave soldering
doesn't work for some kind of smd packages, and it affects how you
design you pcb since the process makes some demands about how you
line up the packages, check this up with someone who knows the process.

The plumber do use soldering in some cases but they mostly use brazing
(hårdlödning) with "kopparfosforlod" (don't know term in english) and 
using acetylen-oxygen welding equipment. Yea, unless they just crimps 
the joints...

For quality control, IPC has a few solder joint evealuation guides and 
other litterature, courses etc. Check them out.
